International Nutrition Research Conference
It is a great honor and pleasure to welcome you to the 9th Edition of the International Nutrition Research Conference (Nutrition 2026), taking place from September 14–16, 2026, in Rome. I am truly delighted to participate as a Scientific Committee Member and Keynote Speaker at this distinguished international gathering. Conferences such as Nutrition 2026 serve as vital platforms for fostering meaningful scientific dialogue, strengthening interdisciplinary collaborations, and advancing innovation in nutrition science. At a time when global health challenges are increasingly complex, our collective expertise and shared commitment are more important than ever.
One of the most pressing concerns we face today is the rising prevalence of childhood obesity. A growing body of evidence indicates that many obesity risk factors originate in the earliest phases of life. The first 1,000 days- from conception to two years of age- represent a uniquely sensitive window that shapes long-term health trajectories and food preferences. During this period, rapid brain development and sensory learning occur, while nutrition, lifestyle, and environmental exposures exert profound and lasting influences on metabolism, behavior, and overall health outcomes.
Dietary intake during early life plays a pivotal role in modulating childhood obesity risk. Healthy infant feeding practices not only support optimal growth and development but also help establish food preferences and eating behaviors that often persist into later childhood and beyond. Infancy, therefore, represents a critical opportunity to promote positive dietary habits and foster lifelong health. Moreover, the early development of taste perception and food pleasure significantly influences children’s subsequent food preferences and choices. Understanding how sensory experiences shape eating behaviors offers valuable insight into designing effective prevention strategies and public health interventions.
