Abstract:
Vitamin A is a fat-soluble vitamin essential for human health. Primarily found in animal-derived foods, it can also be synthesized in the body from carotenoids present in yellow-orange fruits and vegetables. Although long associated with ocular health, vitamin A is now recognized for its multiple physiological benefits. It plays a fundamental role in immune function, growth, reproduction and brain health. It is involved in cell differentiation, in the maintenance of the integrity of epithelial tissues and in bone development. It prevents certain cancers, inflammation, obesity, and diabetes. Vitamin A deficiency is the main cause of preventable blindness worldwide, particularly in many developing countries, affecting young children, as well as pregnant and lactating women. This conference focuses on the benefits of vitamin A and carotenoids in maintaining good health and preventing several diseases, through the action of retinol at the cells.
